Made with Italian basil from Hima Farms (Snohomish County), this vinegar is herby and delicious. The basil provides a peppery, aromatic background to the acidity without overpowering. With an almost effervescent sweetness, it will make the tomato salad dressing of your dreams. Italian dishes are a natural pairing, but we also love it for finishing veggie stews and curries. Try pairing with gin for a fun take on a G&T.

Comes to us from Häxan Ferments (Seattle) via Walla Walla Food Hub. Häxan Ferments is owned and operated by Jessica Huszar. With her background as a molecular biologist, Jessica has always been drawn to complex cooking projects and fermentation. In 2018, she founded Häxan Hot Sauce, working to bring her fermented hot sauce to Seattle using the same techniques she developed in her home kitchen.
