Yes, habaneros are well known as one of the hottest peppers. But they also have a distinctly fruity taste that lends itself well to jam. And the sugar and apricots cut the heat dramatically. You'll notice a little bit of warmth, but I'm able to eat this one on toast! Also wonderful over a soft cheese, or as a glaze on salmon or chicken. Made with ripe apricots from Zerba Farms in Milton-Freewater Oregon. The habaneros, this year, came from my friend Becci Lubbers, who owns the great gift store Shop 11 here in Walla Walla (Shop 11 also carries my soaps).

Almost all MAF jams are made with more fruit than sugar (using a low sugar pectin to ensure gel). Still plenty sweet, but the fruit is the first thing you taste.
